Scallion and Mushroom Breakfast Toast

  • 4 slices of Rustik Artisan White bread
  • 8 scallions
  • 2/3 cup of Chanterelle or Black Trumpet mushrooms
  • 8 eggs
  • 4 tbsp olive oil
  • Black Pepper
  • Salt


  • Wash and cut both scallions and mushrooms
  • In a nonstick skillet, cook olive oil and scallions over medium heat until scallions are lightly browned
  • Add mushrooms, then sprinkle with salt and pepper
  • Whisk eggs, then add to pan and stir until eggs are cooked
  • Toast the bread
  • Top toast with egg mixture
