Vegetable and Egg Skillet

  • Ingredients

  • 4 slices Rustik Hearty Grains & Seeds bread
  • 4 eggs
  • 1 medium onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • ½ zucchini, diced
  • ½ eggplant, diced
  • 2 small tomatoes, diced
  • 4 tbsp olive oil
  • Black Pepper
  • Salt

Directions

  • Toast the bread
  • Heat 2 tbsp of olive oil in a skillet on medium heat, add onions and peppers and sauté
  • Add zucchini and eggplant and cook until soft, about 3 minutes
  • Reduce heat to low. Add tomato and cook an additional 5-10 minutes. Add salt and pepper, remove from heat 
  • Heat 2 tbsp of olive oil in skillet. Crack eggs and fry 2-4 minutes for sunny side up style
  • Serve the vegetable mixture on a plate with the egg on top and accompanied by toast
