- Sourdough Bread from The Rustik Oven
- 2 hard boiled eggs
- ½ c. mayonnaise
- 1 ½ tsp. yellow mustard
- Salt and pepper to taste
- Spinach
directions
- Toast bread until golden brown and crispy
- Separate the yolks and the whites from hard boiled eggs
- Mash the yolks and mix with mayonnaise, mustard, salt and pepper to taste
- Chop the whites and combine with yolk mixture
- Add spinach to bread then add egg salad and top with more spinach and other slice of bread
