ingredients

  • Sourdough Bread from The Rustik Oven
  • 2 hard boiled eggs
  • ½ c. mayonnaise
  • 1 ½ tsp. yellow mustard
  • Salt and pepper to taste
  • Spinach

directions

  1. Toast bread until golden brown and crispy
  2. Separate the yolks and the whites from hard boiled eggs
  3. Mash the yolks and mix with mayonnaise, mustard, salt and pepper to taste
  4. Chop the whites and combine with yolk mixture
  5. Add spinach to bread then add egg salad and top with more spinach and other slice of bread
