- 4 slices of Pane Italiano from The Rustik Oven
- 8 scallions
- 2/3 cup of Chanterelle or Black Trumpet mushrooms
- 8 eggs
- 4 tbsp olive oil
- Black Pepper
- Salt

- Wash and cut both scallions and mushrooms
- In a nonstick skillet, cook olive oil and scallions over medium heat until scallions are lightly browned
- Add mushrooms, then sprinkle with salt and pepper
- Whisk eggs, then add to pan and stir until eggs are cooked
- Toast the bread
- Top toast with egg mixture
