Scallion and Mushroom Breakfast Toast

ingredients

  • 4 slices of Pane Italiano from The Rustik Oven
  • 8 scallions
  • 2/3 cup of Chanterelle or Black Trumpet mushrooms
  • 8 eggs
  • 4 tbsp olive oil
  • Black Pepper
  • Salt

directions

  1. Wash and cut both scallions and mushrooms
  2. In a nonstick skillet, cook olive oil and scallions over medium heat until scallions are lightly browned
  3. Add mushrooms, then sprinkle with salt and pepper
  4. Whisk eggs, then add to pan and stir until eggs are cooked
  5. Toast the bread
  6. Top toast with egg mixture
