- 4 slices of Hearty Grains & Seeds from The Rustik Oven
- 4 eggs
- 1 medium onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- ½ zucchini, diced
- ½ eggplant, diced
- 2 small tomatoes, diced
- 4 tbsp olive oil
- Black Pepper
- Salt
directions
- Toast the bread
- Heat 2 tbsp of olive oil in a skillet on medium heat, add onions and peppers and sauté
- Add zucchini and eggplant and cook until soft, about 3 minutes
- Reduce heat to low. Add tomato and cook an additional 5-10 minutes. Add salt and pepper, remove from heat
- Heat 2 tbsp of olive oil in skillet. Crack eggs and fry 2-4 minutes for sunny side up style
- Serve the vegetable mixture on a plate with the egg on top and accompanied by toast
